The international scientific community now agrees that what until recently was defined simply as adipose tissue, can now be more accurately defined as the ‘adipose organ’, which is composed of two different tissues: white adipose tissue and brown adipose tissue.

Both tissues have the ability to accumulate fat in the form of triglycerides, but they perform different tasks. The white adipocyte accumulates triglycerides to be used as an energy reserve whilst the brown adipocyte accumulates triglycerides to produce heat. The form and functions of these adipocytes can vary based on stimuli from the nervous system, therefore white adipocytes can transform into brown adipocytes, and vice versa.

Prolonged exposure of the organism to an external temperature below the threshold of +14° C triggers the phenomenon of transdifferentiation, which leads to an increase in the percentage of brown adipocytes needed to defend the organism from hypothermia, with significant repercussions on the metabolism of localised and general lipid deposits.
